Thoughts and Ramblings on a Blustery Day

Today is like Pooh's Blustery Day.  The wind howls outside, and the temperature dropped about 25 degrees from yesterday.  It can get quite cold in the desert.  I know those of you who live where snow is measured in feet instead of inches laugh at my definition of cold, but when you live in the desert, cold days seem colder than usual. 

I have my library cleaned in the house. I have dusted each of the nearly 3,000 books I own.  It has taken me four days. Of course I kept finding books I forgotten I had, and they are now waiting for me to read them. Books are like old friends, you always enjoy spending an afternoon with them.  My friends laugh at how many books I get into that room considering we live in a mobile home!  It feels good to have them in order.  It feels good to get things cleaned up, doesn't it?  I think it's like that in our spiritual lives too.  Clutter can set in.  I can get so caught up in the daily routine of living that I forget that my spiritual life needs a little housekeeping too.  I need to confess sins, ask forgiveness, spend time in the Word, and then the Lord comes in and sweeps my heart clean again.  It feels good.

Most of the Christmas decorations are up, so I can scratch a few more items on that list of mine.  When my daughter returns home from work, we shall probably get the last of them up.  The difficult thing will be finding a spot for the Christmas tree.  Tonight we will use our Advent calendar. I love Advent, because it isn't just about remembering the birth of Jesus but also looking forward to Jesus' second coming.  One day soon He will return. 

The sky is overcast and darkening, the wind howls and sends its chill into the house. It's a perfect time to bake!  I love baking on cold, rainy, overcast days.  So, what shall I bake?  My hunter husband returns home tonight from an unsuccessful elk hunt, and a nice dessert might welcome him.  I have some jonagold apples, so I will make an apple crisp.

Here is my recipe in case you might like it. 

4-6 apples peeled, cored, and cut in slices or cubes
3/4 cup flour
1/2 teaspoon baking powder
1/4 cup packed brown sugar
1/2 cup sugar (granulated) plus a little extra for the apples
1 stick of butter very cold and cut in cubes
1  cup rolled oats, I don't use the quick oats kind
1/2  to 1 teaspoon cinnamon
grated nutmeg

Heat oven to 375 degrees.  Grease a 9 X 9 square pan
Mix the flour, baking powder, brown sugar, and white sugar in a large bowl.  Add the butter and cut in with a pastry blender until the mixture is very crumbly.  Add the rolled oats, and mix with your fingers until the dough clumps together.  Place in the refrigerator to keep it cold.
Now slice apples. You can mix some lemon juice on them to keep them from turning brown.  Add some extra granulated sugar.  I think about 3 or 4 Tablespoons, cinnamon and nutmeg.  Place into the greased or buttered dish, Add the crumb mixture on the top, and bake for about one hour or until the top is nicely browned and the apples are done.  Cool about 15 minutes before eating. You can put ice cream on the top, or I like to drizzle Starbucks' Carmel Sauce over the top.  It's yummy eaten warm.
